The heart and soul of Chimayo begins with our open exhibition kitchen featuring two large stone-fired ovens. We specialize in made-from-scratch Southwestern and Mediterranean cuisine. Our fresh salads, small plates, artisanal pizzas, fire-roasted steaks, seafood and our specialty dishes, are roasted at searing temperatures, a clean and simple technique that produces rich and bold flavor. Over at our beautiful and spacious 35-foot curved bar, sip on an expertly crafted seasonal craft cocktails created and served by our experienced bar team. Our community Chef's counter, curved designer booths, rollup garage doors, outdoor patio and restored historic interior offer a variety of unique dining experiences on Main Avenue, right in the heart of downtown Durango.


New Summer Menu!

Join us at Chimayo this Spring/Summer to enjoy our special seasonal offerings! You’ll find signature dishes like the Asparagus Spring Salad, featuring asparagus and golden beets over mixed greens, complimented by almonds and goat cheese . Yum! Other delicious options include Seasonal home-made Soup, the rich and creamy Fettuccine Romesco and the Scarlet Snapper with mole amarillo, toasted pine nuts, served over saffron-risotto cakes with our daily roasted vegetable. Be sure to try our brand new dish, the Braised Pork Belly, with a chipotle sauce rub, served with roasted pineapple and ancho chili slaw.

What’s more? Our talented bar team has rolled out a very exciting new cocktail menu, including warm weather-inspired creations like the Pineapple Habanero Margarita, Bee Tea and Guava Mule. Other additions include the Raspberry Paper Plane ([pictured on right) and Cucumber White Wine Spritzer. Back by popular demand is the Marooned with Monks, a pina colada variation sure to please on hot summer days!
